Mojo Pork

Ingredients

  • 3/4 cup extra-virgin olive oil
  • 1 tablespoon orange zest
  • 3/4 cup fresh orange juice
  • 1/2 cup fresh lime juice
  • 1 cup cilantro, finely chopped
  • 1/4 cup lightly packed mint leaves, finely chopped
  • 8 cloves garlic, minced
  • 1 tablespoon fresh oregano, minced, or 2 teaspoons dried oregano
  • 2 teaspoons ground cumin
  • kosher salt, to taste
  • pepper, to taste
  • 3 1/2 pounds pork shoulder, boneless and in one piece

Directions

Step 1 –In a large resealable bag, combine the olive oil, orange zest, orange juice, lime juice, cilantro, mint, garlic, oregano, and cumin, shaking the bag to combine the mixture.

Step 2 –Add the pork shoulder to the bag and massage lightly so every part of the pork is exposed to the marinade.

Step 3 –Place the bag in a baking dish and place the baking dish in the fridge to marinate for at least 3 hours and up to overnight.

Step 4 –Preheat the oven to 425 degrees F.

Step 5 –Place a wire rack over a rimmed baking sheet.

Step 6 –Place the pork on the rack.

Step 7 –Season the pork with salt and pepper.

Step 8 –Roast until the pork is lightly browned, about 30 minutes.

Step 9 –Reduce the oven temperature to 375 degrees F.

Step 10 –Roast the pork until it reaches an internal temperature of 160 degrees F, about 1 hour and 20 minutes.

Step 11 –Transfer the pork to a cutting board and let it rest for at least 20 minutes.

Step 12 –Slice the pork against the grain and serve!
