Ingredients

  • 1/4 cup fat-free mayonnaise
  • 1/4 teaspoon lime zest, grated
  • 2 tablespoons lime juice
  • 1 teaspoon fresh thyme, minced or 1/4 teaspoon dried thyme
  • 1/2 teaspoon pepper, divided
  • 1/4 cup all-purpose flour
  • 2 large egg whites, lightly beaten
  • 3/4 cup cornmeal
  • 1/4 teaspoon salt
  • 2 medium green tomatoes
  • 2 medium red tomatoes
  • 2 tablespoons canola oil
  • 8 slices of Canadian bacon

Directions

Step 1 –In a small bowl, mix the mayonnaise, lime zest, lime juice, thyme, and 1/4 teaspoon of the pepper.

Step 2 –Refrigerate the mayonnaise mixture until time to serve.

Step 3 –In a shallow bowl, place the flour.

Step 4 –In a second shallow bowl, place the egg whites.

Step 5 –In a third shallow bowl, mix the cornmeal, salt, and the remaining pepper.

Step 6 –Cut the green and red tomatoes crosswise into 4 slices each.

Step 7 –Dredge 1 slice at a time in the flour to lightly coat; shake off the excess.

Step 8 –Dip each tomato in the egg whites, then in the cornmeal mixture.

Step 9 –Repeat with the remaining tomato slices.

Step 10 –In a large nonstick skillet, heat the canola oil over medium heat.

Step 11 –In batches, cook the cornmeal-coated tomatoes until golden brown, about 4-6 minutes per side.

Step 12 –In the same skillet, lightly brown the bacon on both sides.

Step 13 –Prepare each stack with 1 green tomato slice, 2 pieces of bacon, and 1 red tomato slice.

Step 14 –Serve with the mayonnaise sauce.
