Ingredients

  • 8 1/8 tablespoons butter, softened and divided into 1/2 cup (8 tablespoons) and 1/8 tablespoon
  • 1 cup sour cream
  • 1 egg
  • 1 (16-ounce) can whole-kernel corn, drained
  • 1 (16-ounce) can cream-style corn, undrained
  • 4 1/2 ounces corn muffin mix
  • 1 cup cheddar cheese, grated

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –Using the 1/8 tablespoon of butter, grease a 2-quart casserole dish.

Step 3 –In a large bowl, mix the 1/2 cup butter, sour cream, and egg. Stir in the kernel corn, cream-style corn, and corn muffin mix.

Step 4 –Spoon the mixture into the greased casserole dish. Bake for about 45 minutes.

Step 5 –Remove the casserole from the oven and add the cheese, stirring well. Return the casserole to the oven.

Step 6 –Bake until the dish is slightly puffed, bubbly, and browned at the edges, about 15 minutes.
