Ingredients

  • 1 (16-ounce) package elbow macaroni
  • 1 (13-ounce) package turkey kielbasa, cut into small chunks
  • 3/4 cup mayonnaise
  • 3/4 cup barbecue sauce
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon cayenne pepper
  • 1/4 teaspoon chili powder
  • 1 red bell pepper, diced
  • 3-4 green onions, both the green and white parts, diced

Directions

Step 1 –Cook the elbow macaroni to al dente, according to the package directions.

Step 2 –Drain the pasta and run it under cool water until cooled completely.

Step 3 –In a large skillet over medium-high heat, add the kielbasa, sautéing until lightly browned, about 3-4 minutes.

Step 4 –In a small bowl combine the mayo, barbecue sauce, the vinegar, the salt, the pepper, the cayenne pepper, and the chili powder.

Step 5 –In a large bowl combine the cooked and cooled pasta, the diced bell peppers, the green onions, and the browned kielbasa.

Step 6 –Stir in the dressing mixture.
