Ingredients

For the cookies:

  • 1 cup unsalted butter, softened to room temperature
  • 1 cup light brown sugar, packed
  • 3/4 cup granulated sugar
  • 2 large eggs, at room temperature
  • 1 1/2 tablespoons light corn syrup
  • 3 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 cup dutch process cocoa powder
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • 1 teaspoon salt

For the topping:

  • 1 cup semi-sweet chocolate chips
  • 1/3 cup heavy cream
  • rainbow coated chips, optional, for sprinkling

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Line a baking sheet with parchment paper.

Step 3 –Using a stand mixer fitted with a paddle attachment, cream the butter, brown sugar, and granulated sugar on medium speed for 1-2 minutes.

Step 4 –Add the eggs, corn syrup, and vanilla and mix until combined.

Step 5 –Add the flour, cocoa, cornstarch, baking soda, and salt, mixing until the dough comes together.

Step 6 –Using a 1/4 cup measuring spoon, portion the dough into round balls.

Step 7 –Place the dough balls on the prepared baking sheet.

Step 8 –Use the palms of your hands to gently press down on each ball just slightly, until each one becomes a very thick disk.

Step 9 –Bake until the edges are set and the center is no longer shiny, for about 10 minutes.

Step 10 –Transfer the baking sheets from the oven and allow the cookies to cool for at least 5 minutes.

Step 11 –While the cookies cool, place the chocolate chips in a medium-sized heat-proof bowl.

Step 12 –In a microwave-safe bowl, add the heavy cream.

Step 13 –Microwave the heavy cream on high until boiling, about 1 minute-1 minute 30 seconds.

Step 14 –Pour the hot heavy cream over the chocolate chips and let stand for 2-3 minutes.

Step 15 –Gently whisk the chocolate and the cream until smooth.

Step 16 –Spoon 1-2 tablespoons of the ganache over each cookie.

Step 17 –Sprinkle with rainbow-coated chips and serve.
