Acropolis Gyros

Greek flavors are something special; they know how to add brightness and herbaceous goodness into each bite. And it doesn’t get much better than the Acropolis Gyros! Each of these gyros are made with savory steak marinated in herbs and a tangy, lemon-infused sauce, before getting pan-seared to perfection. They’re served on warm pita and topped with… well, your personal pantheon of toppings! You’ll find these Acropolis Gyros are as versatile and delicious as you could ever hope for, and they’re so easy to make, too!

Ingredients

For the gyros:

  • 1 1/2 pounds rib-eye steak, can substitute New York strip or flank
  • 4 cloves garlic, minced
  • 1 lemon, juiced
  • 1/4 cup red vinegar
  • 1 tablespoon oregano
  • 1 teaspoon red chili flakes
  • salt, to taste
  • pepper, to taste
  • 1/2 cup extra-virgin olive oil
  • pita bread, to taste, can substitute naan bread

Optional, for serving:

  • tzatziki, to taste, store-bought or homemade
  • cherry tomatoes, to taste, halved
  • Kalamata olives, to taste, halved
  • red onions, to taste, sliced
  • cucumbers, to taste, diced
  • feta cheese, to taste, crumbled

Directions

Step 1 –Slice the steak into 2-inch strips.

Step 2 –In a bowl, add the garlic, the lemon juice, the vinegar, the oregano, the red chili flakes, the salt, and the pepper and stir to combine.

Step 3 –Add the steak to the garlic-lemon mixture and toss to coat.

Step 4 –Let the steak strips marinate for at least 30 minutes.

Step 5 –In a skillet over medium-high heat, add the oil.

Step 6 –Add the steak strips and sear them until they reach an internal temperature of 145 degrees F, about 5-6 minutes.

Step 7 –In a separate hot skillet over medium-low heat, warm the pita bread briefly on both sides.

Step 8 –Add the steak evenly between the pita bread.

Step 9 –Serve with your preferred toppings.
