What could be better than fried dough dusted with powdered sugar? Very little! Authentic Mandazi is an indulgent treat that is surprisingly easy to make. The mandazi are sweet and fried to golden perfection. Authentic Mandazi are ready in just 30 minutes so you can whip them up as a weeknight snack or dessert without worry!
Ingredients
- 3 cups all-purpose flour, plus more for dusting a work surface
- 1/2 cup sugar
- 1 1/2 teaspoons baking powder
- 2 teaspoons ground cardamom
- 1/2 teaspoon kosher salt
- 1 egg, beaten
- 13 1/2 ounces coconut milk
- oil, to taste, for frying
Directions
Step 1 –Whisk together the flour, sugar, baking powder, cardamom, and salt in a large bowl.
Step 2 –Make a well in the center of the dry ingredients mixture.
Step 3 –Add the egg and coconut milk to the well.
Step 4 –Use a rubber spatula to mix in the egg and coconut milk until the dough comes together.
Step 5 –Dust a work surface with flour.
Step 6 –Turn the dough out onto the floured surface and knead it until it is smooth.
Step 7 –Divide the dough into 4 portions.
Step 8 –Roll out 1 portion of the dough into a circle about 1/4-inch thick.
Step 9 –Cut the dough circle into 8 triangles.
Step 10 –Repeat the same process with the remaining dough portions.
Step 11 –Heat the oil in a large pot until it reaches 350 degrees F.
Step 12 –Working in batches, fry the mandazi until they are golden brown, about 2-3 minutes per side.
Step 13 –Drain the mandazi on paper towels.
Step 14 –Dust the mandazi with powdered sugar and serve.
