Ingredients

  • 2 corn tortillas
  • 1 tablespoon onions, chopped
  • 1 tablespoon bell peppers, chopped
  • 1/4 teaspoon cumin
  • 1 teaspoon cilantro, chopped
  • 1/2 cup canned black beans, rinsed and drained
  • 3/4 ounce low-fat cheddar cheese
  • 1 tablespoon light sour cream
  • 1 tablespoon salsa

Directions

Step 1 –Spray a skillet with cooking spray.

Step 2 –Saute the onions and the peppers in a pan over medium heat until they are tender, about 5 minutes.

Step 3 –Add in the black beans, cumin, and cilantro, making sure that the beans are warmed through.

Step 4 –Transfer the bean mixture to a mixing bowl.

Step 5 –Put one of the tortillas into a skillet.

Step 6 –Add in the bean mixture, cheese, and another tortilla on top.

Step 7 –Heat the tortilla until it starts to crisp on both sides, flipping so that each side gets crisp, about 2 minutes per side.

Step 8 –Move the quesadilla to a plate, cut it into wedges and serve warm with the sour cream and salsa.
