Bohemian Kolaches

Ingredients

  • 2 (.25-ounce) packages active dry yeast
  • 1/2 cup sugar, divided
  • 2 cups 2% milk, warmed to 110 degrees F
  • 5 3/4-6 1/2 cups all-purpose flour, plus more for flouring a worksurface
  • 4 large egg yolks, room temperature
  • 1 teaspoon salt
  • 1/4 cup butter, softened
  • 2 cups canned prune pie filling, poppyseed pie filling, cherry pie filling, or lemon pie filling
  • 1 large egg white, beaten

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Lightly coat an 18×26-inch baking sheet with nonstick spray.

Step 3 –In a small bowl, add the yeast, 1 tablespoon of the sugar, and the milk and mix until the yeast and the sugar are dissolved well. Let the yeast mixture sit for 10 minutes.

Step 4 –In a large bowl, combine 2 cups of the flour, the remaining sugar, the egg yolks, the salt, the butter, and the yeast mixture and mix until it is smooth. Add enough of the remaining flour until the dough is stiff.

Step 5 –On a flat, floured worksurface, turn and knead the dough until it is smooth and elastic, about 6-8 minutes.

Step 6 –Transfer the dough to a large, greased glass bowl and turn it once to grease the top.

Step 7 –Cover the bowl with a clean dish towel and let it rise in a warm place until it doubles in size, about 1 hour.

Step 8 –Uncover the dough and punch it down; then cover the dough again and allow it to rise until it doubles in size, about 1 hour.

Step 9 –On a flat, floured surface, roll the dough out to 1/2-inch-thickness.

Step 10 –Use a large glass or a 2-1/2-inch cutter to cut the dough into pieces until all the dough has been used.

Step 11 –Transfer the dough pieces to the prepared baking sheet, cover it completely with a large dish towel, and let them rise until they have doubled in size, about 45 minutes.

Step 12 –Firmly press an indentation into the center of the dough pieces and fill them with a heaping tablespoon of the pie filling.

Step 13 –Brush the dough pieces with the beaten egg white.

Step 14 –Bake the dough pieces until they are lightly golden-brown, about 10-15 minutes.

Step 15 –Transfer the kolaches to a wire rack to cool.

Step 16 –Serve.
