Let’s be honest: today has been a slog. It’s been rainy, either outside or inside, and nothing has been going quite right. We’ve all had those down days. Thankfully, sometimes the solution is simply to have one good experience to turn things around. The pasta is tender and refreshing, coated in herbaceous parsley, bright lemon, sharp parmesan, and fragrant garlic. Mmm, you can feel your spirits brightening with each bite!   • 8 ounces thin spaghetti
  • 1/2 cup fresh parsley, chopped
  • 2 tablespoons parmesan, grated
  • 1 fresh lemon, zested and sliced into wedges
  • 1/8 teaspoon freshly cracked black pepper
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 1/4 teaspoon salt


Step 1 –Cook the pasta to al dente according to the package directions.

Step 2 –Drain the pasta and set aside.

Step 3 –In a small bowl, combine the chopped parsley, the parmesan, the lemon zest, and the pepper. Set the bowl aside.

Step 4 –Add the olive oil and the minced garlic to the pot you used to cook the pasta, sautéing over medium heat just until fragrant, about 1-2 minutes.

Step 5 –Remove the pot from the heat and add in the pasta and the butter.

Step 6 –Add the parsley mixture to the pot and toss to coat.

Step 7 –Squeeze about 1 tablespoon of the fresh lemon juice over the pasta.

Step 8 –Season the pasta with the salt.

Step 9 –Toss the pasta to combine and taste for seasoning.

Step 10 –Serve warm!
