Ingredients

  • 1 pint of strawberries
  • 1/2 cup sugar, plus more to taste, divided
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract, optional

Directions

Step 1 –Hull and wash the strawberries.

Step 2 –Chop the strawberries into 1/4-inch-thick pieces.

Step 3 –Toss with 1/2 of the sugar and allow the strawberries to release their juices, stirring only occasionally, for about 10 minutes.

Step 4 –Place 1/2 of the strawberries and all of the released juices into a blender and purée.

Step 5 –Pour the purée back into the bowl with the remaining strawberries.

Step 6 –Combine the cream, vanilla extract, and remaining sugar in a bowl.

Step 7 –Whip the cream mixture until the cream is stiff and holds peaks easily.

Step 8 –Fold the berries and cream together.

Step 9 –Serve immediately.
