Bumble Crumble Cake

Ingredients

For the bars:

  • 1/2 cup butter, softened
  • 3/4 cup sugar
  • 1 large egg, room temperature
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup brown sugar, packed
  • 1 teaspoon ground cinnamon

For the filling:

  • 2 cups prepared chunky applesauce
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 2 cups fresh blackberries
  • 2 cups fresh raspberries

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease a 9×13-inch baking pan.

Step 3 –In a large bowl, cream the butter and the sugar together until light and fluffy, about 5-7 minutes.

Step 4 –Beat in the egg.

Step 5 –In another bowl, add the flour, the baking powder, and the salt and whisk together.

Step 6 –Gradually beat the flour mixture into the butter mixture until it resembles crumbs.

Step 7 –Reserve 1/2 cup of the crumb mixture for the topping.

Step 8 –Press the remaining crumb mixture into the bottom of the prepared baking pan.

Step 9 –Bake until lightly browned, about 12-15 minutes.

Step 10 –Cool the crust in the pan on a wire rack.

Step 11 –Stir the brown sugar and 1 teaspoon of the cinnamon into the reserved crumb mixture.

Step 12 –In a large bowl, combine the applesauce, the remaining cinnamon, and the nutmeg until blended.

Step 13 –Spread the applesauce mixture over the crust in the pan.

Step 14 –Top the filling with the blackberries and the raspberries.

Step 15 –Top the berry layer with the reserved topping mixture.

Step 16 –Bake until golden-brown, about 30-35 minutes.

Step 17 –Let it cool on a wire rack, then cut into bars.

Step 18 –Serve.
