Broccoli Chowder

Ingredients

  • 3 cups fresh broccoli florets
  • 2 cups potatoes, diced and peeled
  • 2 cups water
  • 1/3 cup green onions, sliced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1/8 teaspoon ground nutmeg
  • 2 cups whole milk
  • 1/2 cup cheddar cheese, shredded

Directions

Step 1 –In a large saucepan, combine the broccoli, the potatoes, the water, the green onions, the salt, and the pepper.

Step 2 –Bring the mixture to a boil, then reduce the heat to low.

Step 3 –Cover and simmer until the vegetables are tender, about 12-14 minutes.

Step 4 –In another saucepan, melt the butter.

Step 5 –Stir the flour and the nutmeg into the butter until smooth.

Step 6 –Gradually add the milk to the flour mixture.

Step 7 –Bring the milk mixture to a boil and cook, stirring, until thickened, about 2 minutes.

Step 8 –Stir the milk mixture into the vegetable mixture and heat through.

Step 9 –Sprinkle with the cheddar.

Step 10 –Serve.
