Chicken and Wild Rice Bake

The Chicken and Wild Rice Bake has some truly wild flavors in every bite! Roasty, nutty, smoky wild rice blends with the fluffy light flavors of white rice, all of which is saturated with savory chicken broth. Of course, the Chicken and Wild Rice Bake wouldn’t be the same without chicken—juicy, tangy, marinated chicken that will make your mouth water. Mixed with fresh vegetables, this bake has everything you need to make dinner doubly delectable!

Ingredients

  • 8 chicken pieces, bone-in
  • 1/2 cup oil and vinegar dressing, of your choice
  • 2 cups long-grain white rice, uncooked
  • 2 tablespoons wild rice
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 1/2 onion, chopped
  • 1 rib celery, optional, chopped
  • 1/2 cup mushrooms, optional, chopped
  • 4 cups chicken stock

Directions

Step 1 –In a large sealable bag, combine the chicken pieces and dressing.

Step 2 –Seal and massage before refrigerating for 30 minutes or several hours to allow the chicken to marinade.

Step 3 –Preheat the oven to 375 degrees F. Prepare a baking dish with non-stick cooking spray.

Step 4 –Mix together the white rice, wild rice, thyme, pepper, onion, celery, and mushrooms in a pan.

Step 5 –Stir in the chicken stock.

Step 6 –Place the marinated chicken on top of the rice mixture.

Step 7 –Cover the pan and place in the oven to bake for 1 hour.

Step 8 –Uncover and bake until the chicken is cooked through and the rice absorbs the moisture, about 30 minutes.

Step 9 –Serve!
