Chicken Cordon Bleu Casserole

Ingredients

  • 2 tablespoons butter
  • 1/2 cup yellow onion, diced
  • 3 cloves garlic, minced
  • 1/2 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 tablespoon olive oil
  • 2 1/2 cups chicken broth
  • 1 1/4 cups white long-grain rice, uncooked and cleaned
  • 1 (10.75 ounce) can cream of chicken soup
  • 1/2 cup sour cream
  • 1 cup milk
  • 2 teaspoons Dijon mustard
  • 1 cup cheddar cheese, shredded
  • 1/3 cup parmesan cheese, grated
  • 1 cup chicken, cooked
  • 8 ounces ham steak or 1 cup diced ham
  • 9 slices Swiss cheese
  • For the topping:
  • 1 tablespoon butter, melted
  • 1/3 cup seasoned bread crumbs

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –Grease a 9×13-inch casserole dish.

Step 3 –Melt 2 tablespoons of butter in a pan. Add in the diced onions and cook them until softened, about 3-5 minutes.

Step 4 –Add the garlic, garlic powder, and thyme and cook until fragrant, about 1 minute.

Step 5 –Stir in the olive oil, chicken broth, and the rice.

Step 6 –Bring the mixture to a boil.

Step 7 –Reduce the heat to a simmer.

Step 8 –Cover and allow it to cook for 15 minutes, undisturbed.

Step 9 –Remove the pan from the heat and uncover.

Step 10 –Let the mixture sit for 10 minutes.

Step 11 –Stir in the cream of chicken soup, sour cream, milk, Dijon mustard, cheddar, cheese, parmesan cheese, chicken, and ham steak.

Step 12 –Transfer the mixture to the prepared casserole dish.

Step 13 –Layer the Swiss cheese on top of the mixture.

Step 14 –Bake until the cheese is bubbly and melted, about 15 minutes.

Step 15 –Mix together the melted butter and breadcrumbs.

Step 16 –Sprinkle the mixture on top of the casserole.

Step 17 –Bake for 10 minutes, uncovered.

Step 18 –Allow the casserole to cool before serving.

Step 19 –Serve.
