Ingredients

  • 6 (4-6-ounce) chicken thighs or breasts, boneless, skinless, and cut into 1-2-inch pieces
  • 1 tablespoon olive oil
  • 4 bell peppers, sliced
  • 1 small onion, sliced
  • 1 (1-ounce) packet of fajita seasoning
  • 1 cup sour cream
  • 4 ounces cream cheese, softened
  • 2 cups cheddar cheese, grated

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –In an oven-safe skillet, over medium heat, sauté the chicken in the oil until no longer pink and an instant thermometer inserted into the center reads 165 degrees F, about 7-10 minutes.

Step 3 –Transfer the chicken out of the skillet and set it aside.

Step 4 –Add the onions and peppers to the skillet and sauté until they are tender, for about 3-5 minutes.

Step 5 –Add the chicken back to the skillet and stir in the fajita seasoning, sour cream, and cream cheese. Mix well.

Step 6 –Sprinkle the chicken mixture with cheddar cheese.

Step 7 –Bake until the cheese is bubbly, about 20 minutes.

Step 8 –Serve with your favorite Tex-Mex garnishes like guacamole, sour cream, salsa, and/or hot sauce.
