Chilaquiles

This Southwestern breakfast dish is a way to get your morning started right. Chilaquiles feature fried tortillas doused with green salsa and topped with fried eggs. This dish is spicy, crunchy, and salty. In other words, the ideal breakfast. Make Chilaquiles extra spicy with a side of cinnamon-and-chile-laced Mexican hot chocolate.

Ingredients

  • 6 corn tortillas
  • 1/4 cup canola oil, for frying
  • 10 ounces salsa verde or green enchilada sauce
  • 2 eggs, fried or scrambled

Optional toppings:

  • avocado
  • crema
  • cilantro

Directions

Step 1 –Cut the corn tortillas into quarter pieces.

Step 2 –In a large skillet, heat the canola oil over medium heat.

Step 3 –Fry each side of the tortilla pieces lightly, until crispy and golden brown.

Step 4 –Transfer the fried chips onto a plate covered with a paper towel to drain the excess oil.

Step 5 –Remove the oil from the skillet.

Step 6 –In the skillet, heat the green sauce over medium heat.

Step 7 –Add in the chips and toss until they are fully coated.

Step 8 –Add in the eggs and any desired additional toppings.

Step 9 –Serve immediately.
