Chori Pollo

What does Chori Pollo mean, you might be wondering? It’s simple! Chori represents that juicy, spicy chorizo sausage that’s stirred in there. And pollo means chicken in Spanish, so you can count on cubes of that tender, fried goodness in this dish, too! Seasoned to good measure and served with melted cheese over the top, you’ll soon find that to you, Chori Pollo is synonymous with delicious!

Ingredients

  • 1 pound ground chorizo sausage, raw (not cured)
  • 1 small onion, sliced or diced
  • 1 pound chicken breasts, boneless and skinless, cut into 1-inch chunks
  • 1 tablespoon low-sodium taco seasoning
  • 1/2 teaspoon paprika
  • 2 cups white cheddar or pepper jack cheese, shredded
  • cilantro leaves, to taste, for garnish

Directions

Step 1 –In a 10-inch skillet over medium heat, add the chorizo and the onion and cook, while crumbling the meat, until the sausage is no longer pink and the onions are translucent, about 5 minutes.

Step 2 –Use a slotted spoon to transfer the chorizo-onion mixture to a plate, leaving the drippings in the skillet.

Step 3 –Add the chicken chunks to the drippings and cook until they reach an internal temperature of 165 degrees F, about 5-6 minutes.

Step 4 –Add the chorizo-onion mixture, the taco seasoning, and the paprika to the chicken chunks and stir to combine.

Step 5 –Simmer the meat mixture for 5 minutes.

Step 6 –Sprinkle the cheese over the meat mixture and let rest until it melts.

Step 7 –Serve the Chori Pollo garnished with the cilantro.
