Ingredients
- 4 cups water
- salt, to taste
- pepper, to taste
- 1 cup stone-ground grits
- 3 tablespoons butter
- 2 cups sharp cheddar cheese, shredded
- 6 slices bacon, chopped
- 1 pound shrimp, peeled and deveined
- 4 teaspoons lemon juice
- 2 tablespoons parsley, chopped
- 1 cup scallions, thinly sliced
- 1 large clove garlic, minced
Directions
Step 1 –Bring the water to a boil in a pot.
Step 2 –Add in the salt and pepper.
Step 3 –Add in the grits, cooking until the water is fully absorbed by the grits, about 20-25 minutes.
Step 4 –Remove the pot of grits from the heat.
Step 5 –Stir in the butter and cheddar cheese.
Step 6 –Fry the bacon in a skillet until they are crispy and browned.
Step 7 –Drain the bacon, reserving about 1 1/2 tablespoons of the grease.
Step 8 –Transfer the bacon pieces to a plate, and set them aside.
Step 9 –Drain and rinse the shrimp, patting them dry.
Step 10 –Add the shrimp to the skillet with the bacon. Cook the shrimp until it turns pink, about 2-3 minutes per side.
Step 11 –Add in the lemon juice, chopped bacon, parsley, scallions, and garlic, sautéing for 3 minutes.
Step 12 –Pout the grits into your serving bowl.
Step 13 –Add in the shrimp mixture and mix it well.
Step 14 –Serve hot!
