Chubba Bubba Salad

Some people hear “cauliflower salad” and immediately assume it just can’t be fun. Chubba Bubba Salad begs to differ: the mild cauliflower and fresh broccoli are paired up with bacon, the crunchy hero of salads everywhere, as well as sharp cheese and red onions for an extra kick of flavor. Coating it all over is creamy, fatty, sweet, and tangy dressing that could add excitement to anything. Ingredients

  • 1/2 (16-ounce) package bacon
  • 1 (12-ounce) package broccoli florets, chopped
  • 1 (10-ounce) package cauliflower florets, chopped
  • 1 cup cheddar cheese, shredded
  • 1/2 cup carrot, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1/2 cup mayonnaise
  • 1 tablespoon sugar
  • 2 tablespoons red wine vinegar

Directions

Step 1 –In a large skillet over medium-high heat, cook the bacon until crisp, about 10-12 minutes.

Step 2 –Transfer the bacon to paper towels to drain.

Step 3 –Crumble the bacon.

Step 4 –Bring a pot of salted water to a boil.

Step 5 –Add the broccoli and the cauliflower to the boiling water and cook, covered, until crisp-tender, about 2 minutes.

Step 6 –Drain the veggies and plunge them into ice water to stop the cooking process.

Step 7 –Drain the veggies well.

Step 8 –Place the veggie mixture in a large bowl.

Step 9 –Add the cheese, the carrot, and the onion to the bowl.

Step 10 –Stir together the mayonnaise, the sugar, and the vinegar.

Step 11 –Pour the dressing mixture over the veggie mixture, tossing to coat.

Step 12 –Top the salad with the bacon.

Step 13 –Cover and chill the salad for at least 1 hour and up to 8 hours.

Step 14 –Serve chilled.
