When the summer starts to turn up the heat, you pull out the popsicles. But when you want to get the party started, you pull out the Cornsicles! These grilled confections take golden ears of corn and grill them to add a crunch to their summer sweetness. Then each piece is slathered in a savory, creamy, garlic-infused sauce and sprinkled with sharp feta and aromatic cilantro, adding a new dimension to the bright corn flavor that will leave everyone speechless. Cornsicles need just over half an hour to come together and only one second to amaze every tastebud at the cookout.

Ingredients

  • 8 medium ears sweet corn, husked
  • 2 tablespoons canola oil
  • 1 1/2 cups mayonnaise
  • 1 1/2 teaspoons garlic powder
  • 1/4 teaspoon freshly ground pepper
  • 2 cups feta cheese, crumbled
  • 2 tablespoons seafood seasoning
  • 1/4 cup fresh cilantro, minced
  • lime wedges, optional, to taste, for serving

Directions

Step 1 –Preheat the grill to medium heat.

Step 2 –Brush all sides of the corn with the oil.

Step 3 –Grill the corn, covered and occasionally turning until it is tender and lightly browned, for about 10-12 minutes.

Step 4 –Remove the corn from the grill and allow it to cool slightly.

Step 5 –While the corn cooks, in a small bowl, mix the mayonnaise, the garlic powder, and the pepper.

Step 6 –Cut each ear of the corn into thirds and insert one of the corn cob holders into each piece.

Step 7 –Spread the mayonnaise mixture over each piece of the corn.

Step 8 –Sprinkle with the cheese, the seafood seasoning, and the cilantro.
