Cranberry Freeze

Those potlucks and backyard picnics just wouldn’t be the same without an ambrosia salad; creamy and refreshing sweetness just ready to be scooped up. Well, Cranberry Freeze decides to ramp up the refreshment by giving that same salad the frozen yogurt treatment! Tart yet sweet cranberry, fluffy marshmallows, and tangy pineapples are folded with cloud-like cream, and then frozen so each slice is cool and comforting! No matter the season, Cranberry Freeze is a welcome sight and an even more craveable taste!

Ingredients

  • 2 (16-ounce) cans whole-berry cranberry sauce
  • 1 (20-ounce) can plus 1 (8-ounce) can crushed pineapple, drained
  • 1 (10-ounce) package miniature marshmallows
  • 1 cup green maraschino cherries, quartered
  • 1 cup red maraschino cherries, quartered, plus more, whole cherries, to taste, for garnish
  • 1 teaspoon lemon juice
  • 3 cups heavy whipping cream, whipped
  • fresh mint leaves, optional, to taste, for garnish

Directions

Step 1 –In a large bowl, add the cranberry sauce, the drained pineapple, the marshmallows, the green cherries, 1 cup of the red cherries, and the lemon juice and stir to combine.

Step 2 –Add the whipped cream to the cranberry mixture and fold to combine.

Step 3 –Spoon the mixture into a 9×13-inch baking dish.

Step 4 –Cover the dish and freeze it for at least 8 hours and up to overnight.

Step 5 –Remove from the freezer 10 minutes prior to serving.

Step 6 –Serve garnished with the extra red cherries and the mint leaves.
