Cranberry Marshmallow Salad

As a kid, laying in the grass and daydreaming about the shapes of the clouds was THE thing to do. Now as an adult, we lay on the couch and dream about floating clouds of Cranberry Marshmallow Salad. You know, that’s just the way it goes, and we can’t help it. This creamy-dreamy concoction of tart cranberries loaded with perky pineapples, all mellowed out with a soft marshmallow-y whipped cream and a sprinkling of crisp walnuts, is truly what sweet dreams are made of. It’s ok to admit that you too will be dreaming of Cranberry Marshmallow Salad after just one bite. Be that kid again and use your imagination to add a bit of flare back into your menu. Just imagine where it can take you!

Ingredients

  • 3 cups fresh or frozen cranberries, thawed, chopped
  • 1 (20-ounce) can unsweetened crushed pineapple, drained
  • 2 cups miniature marshmallows
  • 1 medium apple, chopped
  • 2/3 cup sugar
  • 1/8 teaspoon salt
  • 2 cups heavy whipping cream
  • 1/4 cup walnuts, chopped

Directions

Step 1 –In a large bowl, add the cranberries, the pineapple, the miniature marshmallows, the apple, the sugar, and the salt and stir to combine.

Step 2 –Tightly cover the bowl and refrigerate for at least 8 hours and up to overnight.

Step 3 –In a medium bowl, add the heavy whipping cream and beat with an electric hand mixer until stiff peaks form, about 3-4 minutes.

Step 4 –Add the whipped cream and the walnuts to the cranberry mixture and fold to combine.

Step 5 –Plate and serve.
