Creamy Cranberry Salad

Momma always told us we needed to have a salad with every dish we ate for lunch or dinner. But… she never said what needed to be in that salad, so we think we just found the perfect caveat. This fun and silly exception is what we like to call Creamy Cranberry Salad, and you can rest assured, there are no greens here! Just some sweet and bouncy raspberry gelatin loaded with tart cranberries and a little bit of citrusy flavoring. We like to top it off with some fluffy whipped cream and a couple of candied raspberries for the perfect treat. Surely momma will approve of this Creamy Cranberry Salad. And if not, we might just still go for it, because it’s too good to turn down!

Ingredients

  • 12 ounces fresh or frozen cranberries
  • 1/2 cup sugar
  • 1/4 cup orange juice
  • 1 tablespoon lemon juice
  • 1 (3-ounce) package raspberry gelatin
  • 1 cup heavy whipping cream
  • whipped cream, optional, to taste, for serving
  • candied raspberries, optional, to taste, for serving

Directions

Step 1 –In a large pot, bring the cranberries, the sugar, the orange juice, and the lemon juice to a boil.

Step 2 –Reduce the heat and simmer the cranberry mixture until the cranberries pop and are cooked, about 7-8 minutes.

Step 3 –Transfer the cranberry mixture from the heat and stir in the raspberry gelatin.

Step 4 –Allow the gelatin mixture to cool completely.

Step 5 –Fold the heavy whipping cream into the gelatin mixture.

Step 6 –Spread the gelatin mixture in a large bowl and refrigerate until it has set for at least 2 hours and up to overnight.

Step 7 –Garnish the cranberry salad with the whipped cream and the candied raspberries.

Step 8 –Serve.
