Dirt Cupcakes

Ingredients

  • 1 (15.25-ounce) box chocolate cake mix, plus the ingredients called for on the box but using 1 less egg than instructed (should use a total of 2 eggs)
  • 1 (3.5-ounce) box chocolate pudding mix
  • 2 ounces vanilla yogurt
  • 1 cup unsalted butter, room temperature
  • 3 cups confectioners’ sugar, plus more, to taste
  • 1/2 cup Dutch-processed cocoa powder
  • 3 tablespoons heavy cream, plus more, to taste
  • 1/4 teaspoon salt
  • 2 teaspoons pure vanilla extract
  • 1 cup chocolate sandwich cookies, crushed, for topping
  • gummy worms, optional, to taste, for topping

Directions

Step 1 –Prepare the chocolate cake mix as cupcakes, according to the package directions, and add in the pudding mix and the yogurt.

Step 2 –Bake the cupcakes according to the package directions.

Step 3 –Allow the cupcakes to cool.

Step 4 –In a bowl, add the butter and beat with an electric mixer on medium speed until creamy, about 2 minutes.

Step 5 –Add 3 cups of the confectioners’ sugar, the cocoa powder, 3 tablespoons of the heavy cream, the salt, and the vanilla extract to the butter and beat on low speed for 30 seconds.

Step 6 –Increase the mixing speed to high and beat until everything is well-combined, about 2 minutes.

Step 7 –If the buttercream seems too thin, add the extra confectioners’ sugar, a little at a time, and if it seems too thick, add the extra heavy cream, a little at a time, until it reaches your desired consistency.

Step 8 –Transfer the buttercream to a piping bag.

Step 9 –Once the cupcakes have cooled completely, pipe the buttercream onto the cupcakes.

Step 10 –Sprinkle the cupcakes with the crushed cookies and the gummy worms.

Step 11 –Serve.
