Ingredients

For the cake:

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold butter, cubed
  • 1 large egg, room temperature and beaten
  • 2/3 cup half-and-half cream

For the icing:

  • 1 cup heavy whipping cream
  • 2 tablespoons confectioners’ sugar
  • 1/8 teaspoon vanilla extract
  • butter, to taste
  • 1 1/2 cups fresh strawberries, sliced

Directions

Step 1 –Preheat the oven to 450 degrees F.

Step 2 –Grease an 8-inch round baking pan.

Step 3 –In a large bowl, combine the flour, the sugar, the baking powder, and the salt.

Step 4 –Cut the butter into the flour mixture until it resembles coarse crumbs.

Step 5 –In another bowl, whisk the egg and the half-and-half together.

Step 6 –Add the egg mixture to the crumb mixture and stir until it is just moistened.

Step 7 –Spread the batter into the prepared pan, slightly building it up around the edges.

Step 8 –Bake the cake until it is golden-brown, about 16-18 minutes.

Step 9 –Transfer the cake from the pan and onto a wire rack to cool.

Step 10 –In a bowl, beat the heavy cream until it thickens.

Step 11 –Add the confectioners’ sugar and the vanilla to the whipped cream and beat until stiff peaks form.

Step 12 –Carefully use a sharp knife to split the cake in half crosswise.

Step 13 –Butter the bottom layer of the cake and top with 1/2 of the strawberries.

Step 14 –Top the strawberries with about 1/2 of the whipped topping.

Step 15 –Place the remaining cake on top of the whipped topping and cover with the remaining strawberries and the remaining whipped topping.

Step 16 –Cut into wedges and serve.
