Easy Cream Cheese Pasta Bake

Ingredients

  • 2 pints cherry tomatoes
  • 1/2 small white onion, minced
  • 1/4 cup sun-dried tomatoes
  • 1/4 cup olive oil
  • 3 cloves fresh garlic, minced
  • 1 teaspoon Italian seasoning
  • salt, to taste
  • pepper, to taste
  • 8 ounces cream cheese
  • 2 cups fresh spinach, gently torn
  • 8 ounces pasta, cooked
  • basil, optional, to taste, for garnish

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Add the cherry tomatoes, the onions, the sun-dried tomatoes, the olive oil, the garlic, the Italian seasoning, the salt, and the pepper to a 9×13-inch baking dish and stir to combine.

Step 3 –Place the cream cheese in the center of the tomato mixture.

Step 4 –Bake the tomato mixture until the cheese is golden and looks like it’s about to fall apart, about 35-40 minutes.

Step 5 –Transfer the tomato mixture from the oven and use a spoon to gently smash down the tomatoes and stir in the cream cheese to create a sauce.

Step 6 –Stir the spinach into the tomato mixture until it is wilted.

Step 7 –Stir the cooked pasta into the tomato mixture.

Step 8 –Serve the pasta bake garnished with the basil.
