Ingredients

  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • 3 eggs, beaten
  • 1 3/4 cups panko breadcrumbs
  • 2 pounds jumbo shrimp, deveined, peeled, and tail on
  • oil, for frying
  • lemon wedges, optional, for garnish
  • parsley, optional, for garnish
  • cocktail sauce, optional, for serving

Directions

Step 1 –Combine the flour, salt, pepper, and garlic powder in a medium bowl.

Step 2 –Add the eggs to a second bowl and the breadcrumbs in a third.

Step 3 –Create an assembly line. Dip the shrimp in the flour, then the egg, then coat well in the breadcrumbs.

Step 4 –Repeat the process until all of the shrimp has been coated.

Step 5 –Heat the oil in a stockpot to 350 degrees F. Throughout the process, continue to check the temperature of the oil. Too hot, and the shrimp will burn. Not hot enough, and too much oil will be absorbed.

Step 6 –Fry about 6 shrimp at a time until golden in color, about 3-4 minutes.

Step 7 –Remove the shrimp from the oil to a plate with paper towels to drain the excess oil.

Step 8 –Repeat until all of the shrimp has been fried and drained.
