Ingredients

For the oyster sauce:

  • 2 tablespoons oyster sauce
  • 1 tablespoon chili garlic sauce
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup water

For the beef:

  • 1 pound flank steak, thinly sliced
  • 4 cloves garlic, minced
  • 1 tablespoon cornstarch
  • 1 egg yolk
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

For the stir fry:

  • 2 tablespoons peanut oil, divided
  • 1 onion, sliced
  • 3.5 ounces shiitake mushrooms, sliced
  • 1 red bell pepper, sliced into thin strips
  • 4 cups broccoli florets, cut into small bite-size pieces
  • 1/3 cup water
  • 20 ounces udon noodles, cooked

Directions

Step 1 –In a small mixing bowl, combine all of the oyster sauce ingredients and set aside.

Step 2 –Add the flank steak to a large bowl.

Step 3 –Add the garlic, cornstarch, egg yolk, salt, and pepper. Toss to combine.

Step 4 –Heat 1 tablespoon of peanut oil over the stovetop in a large skillet.

Step 5 –Add half of the flank steak and brown for about 3 minutes.

Step 6 –Work in batches to prevent the steak from sticking together.

Step 7 –Once all the beef is cooked, transfer it to a plate for later.

Step 8 –Add the remaining tablespoon of peanut oil to the same skillet that you cooked the steak in. Cook the onions and shitake mushrooms for about 5 minutes until the onions are translucent.

Step 9 –Add the pepper, broccoli, and 1/3 cup of water and cook until the broccoli is bright green and tender, another 7 minutes or so.

Step 10 –Add the cooked udon noodles, beef, and oyster sauce.

Step 11 –Toss everything well so that all ingredients are evenly coated in the sauce.

Step 12 –Allow the sauce to thicken for another minute or two.

Step 13 –Serve and enjoy!
