Ingredients
For the noodles:
- 8 ounces udon or rice noodles
- 1 1/4 cups peanut sauce, store-bought or homemade
- 1 tablespoon tamari
- 1/2 English cucumber, optional, julienned
- 1 medium carrot, julienned
- 7 ounces extra-firm tofu, cut into thin strips
Optional, for serving:
- Thai basil leaves, to taste, can substitute fresh mint or cilantro
- peanuts, to taste, crushed
- black sesame seeds, to taste
- sriracha, to taste

Directions
Step 1 –In a large pot of salted, boiling water, cook the noodles to al dente, according to the package directions.
Step 2 –Drain and rinse the noodles under cold water.
Step 3 –Add the noodles, the peanut sauce, and the tamari to a large bowl and toss to combine.
Step 4 –Portion the noodles into four serving bowls.
Step 5 –Top the noodles in each bowl evenly with the cucumber, the carrot, and the tofu.
Step 6 –Serve topped with the Thai basil leaves, the peanuts, the sesame seeds, and the sriracha.
