Ingredients

  • 1 (8-ounce) package soba noodles
  • 1/4 cup rice wine vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon sugar
  • 1 clove garlic, pressed
  • 1 teaspoon ginger, grated
  • 2 green onions, thinly sliced
  • 2 tablespoons fresh cilantro leaves, chopped
  • 1 teaspoon sesame seeds
  • 2 hard boiled eggs, sliced lengthwise, for garnish

Directions

Step 1 –In a large pot of salted, boiling water, cook the noodles to al dente according to the package directions.

Step 2 –Drain the noodles into a colander, rinse them under cold water, drain the water, and return the noodles to the pot. Cover and keep warm.

Step 3 –In a small bowl, whisk the rice wine vinegar, the soy sauce, the sesame oil, the sugar, the garlic, and the ginger together.
