Easy Pizza Muffins

\Here’s something you don’t see every day: a savory muffin. The savory deliciousness of a pizza is condensed into portable muffin form for snacks on the go. Easy Pizza Muffins, which take about 30 minutes to make, can also be served as appetizers. These cheesy Easy Pizza Muffins are also a lot less messy than eating a traditional slice, and a lot more breakfast oriented.

Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon dried basil leaves
  • 1/2 teaspoon dried oregano
  • 2 tablespoons white sugar
  • 3 sun-dried tomatoes packed in oil, drained and diced
  • 2 1/2 cups sharp cheddar cheese, shredded and divided
  • 4 green onions, chopped
  • 1 egg, beaten
  • 1 1/2 cups buttermilk

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –Grease cups of a muffin tin or line the cups with paper muffin liners.

Step 3 –In a large bowl, combine the flour, baking powder, baking soda, salt, basil, oregano, and sugar into a large bowl.

Step 4 –Stir until well blended.

Step 5 –Mix in the tomatoes, 1 1/2 cups of the cheese, and the onions.

Step 6 –In another bowl, beat the egg.

Step 7 –Whisk the buttermilk into the egg, stirring until combined.

Step 8 –Spoon the batter into the muffin tins until the tins are half full.

Step 9 –Sprinkle the remaining 1 cup of cheese on top of the muffins.

Step 10 –Bake the muffins until a toothpick inserted into the center of the muffin comes out clean, about 15-20 minutes.

Step 11 –Let the muffins cool for a few minutes and then serve warm.
