Ingredients

For the cake:

  • 1 1/4 cups egg whites
  • 1 1/2 teaspoons cream of tartar
  • 1 1/2 cups sugar, divided
  • 1 teaspoon almond flavoring
  • 1/4 teaspoon salt
  • 1 cup cake flour, sifted 2-3 times

For the whipped pink clouds topping:

  • 1/2 pint heavy cream, whipped
  • 2 tablespoons powdered sugar
  • 1 pint strawberries, cut in half

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –Grease a fluted tube pan.

Step 3 –In a mixing bowl, add the egg whites and beat with a hand mixer until foamy.

Step 4 –Gradually add the cream of tartar and 1 cup of the sugar to the egg whites and beat until peaks form.

Step 5 –Add the almond flavoring to the egg white mixture and beat to incorporate.

Step 6 –In a medium bowl, sift the remaining sugar.

Step 7 –Add the salt and the sifted flour to the sugar and stir to combine.

Step 8 –Gradually fold the flour mixture into the egg white mixture.

Step 9 –Pour the batter into a fluted tube pan and bake until a toothpick inserted into the center comes out clean, about 30-35 minutes.

Step 10 –In a mixing bowl, add the whipped cream and beat until soft peaks form.

Step 11 –Add the powdered sugar to the whipped cream and beat until hard peaks form.

Step 12 –Just before serving, fold the strawberries into the whipped cream mixture.

Step 13 –Slice the cake and serve with the whipped pink clouds topping.
