Vegetable Whip

Everyone loves whipped potatoes, but there’s no reason your veggie course can’t get in on the action as well! Vegetable Whip is a light, fluffy, smooth flavor experience, an ethereal way to enjoy mildly spicy turnips, bright carrots, savory onions, and yes, wonderful potatoes (they count as veggies, right?) made creamy and rich with butter and milk. Mmm, Vegetable Whip doesn’t even need anything else to be sumptuous! Just a spoon and an appetite!

Ingredients

  • 1 turnip, peeled and diced
  • 4 carrots, peeled and diced
  • 1 large onion, chopped
  • 6 medium potatoes, peeled and cubed
  • water, to taste
  • 1/4 cup butter
  • 1/2 cup milk
  • salt, to taste
  • black pepper, to taste
  • fresh herbs, optional, such as parsley, to taste, chopped

Directions

Step 1 –In a pot, add the turnips, the carrots, the onions, and the potatoes and cover them with the water.

Step 2 –Bring the water to a boil over medium-high heat and cook until the vegetables are fork-tender, about 10-15 minutes.

Step 3 –Drain the vegetables.

Step 4 –Add the butter to the hot vegetables and stir until melted.

Step 5 –Using an electric mixer, beat the vegetables, gradually adding the milk, until the mixture is light and fluffy.

Step 6 –Season the vegetable mixture with the salt and the pepper.

Step 7 –Serve the whip hot, garnished with the herbs.
