Fall Oatmeal Bake

Breathing in the crisp air and seeing the sunrise glimmer through the red and orange leaves really makes being a little sleepy worth it. Oh, and so does this Fall Oatmeal Bake. These made-at-home breakfast bars meld together some of your go-to oats with the warm, sweet tastes of the season. Think of it as the oatmeal version of your favorite pumpkin pie. It’s a delightful bite to enjoy alongside the simple wonders of the cool morning. Grab a warm beverage and a piece of this Fall Oatmeal Bake, and soak in the sunrise in pure happiness!

Ingredients

  • 1 (15-ounce) can pumpkin purée
  • 4 tablespoons unsalted butter, melted and cooled, plus more, to taste, softened, for greasing the pan
  • 3 cups old-fashioned oats
  • 3/4 cup light brown sugar, packed
  • 1 teaspoon baking powder
  • 3/4 teaspoon fine sea salt
  • 1 1/2 teaspoons cinnamon
  • 3/4 teaspoon ginger
  • 1/4 teaspoon cloves
  • 1/4 teaspoon allspice
  • 1 1/4 cups milk
  • 2 eggs
  • 1 teaspoon vanilla
  • Greek yogurt, to taste, for serving
  • cinnamon sugar, to taste, store-bought or homemade, for serving

Directions

Step 1 –About 30 minutes before preparing the oatmeal bake, line a mesh sieve with a cheesecloth and place over a bowl. Pour the pumpkin purée into the cheesecloth and let it drain, occasionally pressing it down with a spoon.

Step 2 –Preheat the oven to 350 degrees F.

Step 3 –Grease an 11×7-inch pan with the extra softened butter.

Step 4 –In a large bowl, add the oats, the brown sugar, the baking powder, the salt, the cinnamon, the ginger, the cloves, and the allspice and stir until the mixture is well-combined.

Step 5 –Squeeze the cheesecloth to remove the excess liquid from the pumpkin.

Step 6 –In another bowl, add 3/4 cup of the strained pumpkin purée. Reserve the remaining pumpkin for another use.

Step 7 –Add the milk, the eggs, the remaining 4 tablespoons of the melted butter, and the vanilla to the pumpkin purée and whisk until smooth.

Step 8 –Add the pumpkin mixture to the oat mixture and stir until they are combined.

Step 9 –Pour the pumpkin-oat mixture into the prepared pan and bake until it is firm, about 35 minutes.

Step 10 –Transfer the oatmeal bake from the oven and cut it into bars.

Step 11 –Serve the oatmeal bars topped with the yogurt and the cinnamon sugar.
