Ingredients

  • 3 cups hash brown potatoes, diced
  • 1/4 cup red bell pepper, chopped
  • 1/4 cup green bell pepper, chopped
  • 1 cup cheddar cheese, shredded
  • 1/4 cup green onions, chopped
  • 1 cup ham, cubed and cooked
  • 1 (6-ounce) can evaporated milk
  • 5 large eggs
  • 1/2 teaspoon garlic powder
  • salt, to taste
  • pepper to taste

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Place the hash browns, red bell peppers, and green bell peppers into an 8-inch baking dish.

Step 3 –Sprinkle the hash brown mixture with the cheddar cheese.

Step 4 –Add the green onions and ham.

Step 5 –In a small bowl, whisk the milk, eggs, garlic powder, salt, and pepper together.

Step 6 –Pour the egg mixture into the baking dish.

Step 7 –Bake until a knife inserted into the center comes out clean, about 55-60 minutes.
