Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 cup carrots, diced
  • 1 clove garlic, minced
  • 3 teaspoons ground cumin
  • 2 tablespoons chili powder, plus more to taste
  • 1 pound ground turkey breast
  • 14 1/2 ounces mild salsa
  • 3 cups chicken broth
  • 2 (14.5 ounce) cans black beans, drained and rinsed
  • 1 tablespoon low-sodium tomato paste

Directions

Step 1 –Heat the olive oil in a saucepan over medium-low heat.

Step 2 –Add the onions, red bell pepper, green bell pepper, carrots, and garlic.

Step 3 –Cook until the onions are golden and veggies are tender, about 8 minutes, stirring frequently.

Step 4 –Sprinkle the ground cumin and chili powder.

Step 5 –Add the ground turkey breast and stir, breaking up the meat.

Step 6 –Heat until the meat is cooked through, 5-7 minutes.

Step 7 –Add the salsa, chicken broth, black beans, and tomato paste.

Step 8 –Simmer over medium heat.

Step 9 –Lower the heat.

Step 10 –Simmer uncovered until liquid has reduced and the chili has thickened, about 45 minutes.

Step 11 –Serve.
