Firecracker Bake

Usually, fireworks are visual entertainment, but not in this case! This golden, savory Firecracker Bake will make your tastebud sparks fly! It’s exploding with spicy chili powder and rich ground cumin flavors. The meaty ground beef, sweet chopped onions, soft flour tortillas, hearty cream of mushroom soup, and flavorful tomatoes and green chiles all mixed together make this dish an absolute banger! Topped with melty cheddar cheese, Firecracker Bake is a bright and spectacular dining event!

Ingredients

  • 2 pounds of ground beef
  • 1 medium onion, chopped
  • 1 (15-ounce) can of black beans, rinsed and drained
  • 1-2 tablespoons chili powder
  • 2-3 teaspoons ground cumin
  • 1/2 teaspoon salt
  • 4 (6-inch) flour tortillas
  • 1 (10.75-ounce) can of condensed cream of mushroom soup, undiluted
  • 1 (10-ounce) can of diced tomatoes and green chiles, undrained
  • 1 cup cheddar cheese, shredded

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease a 9×13-inch baking dish.

Step 3 –In a large skillet, cook and crumble the beef and the onion until the meat is no longer pink, about 5-7 minutes.

Step 4 –Drain the grease from the skillet.

Step 5 –Stir the black beans, chili powder, cumin, and salt into the beef and onions.

Step 6 –Transfer the meat mixture to the prepared baking dish.

Step 7 –Arrange the tortillas over top of the meat mixture.

Step 8 –In a small bowl, combine the condensed cream of mushroom soup and the diced tomatoes and chiles.

Step 9 –Pour the soup mixture over the tortillas.

Step 10 –Sprinkle the cheese over the top of the casserole.

Step 11 –Bake the casserole (uncovered) until heated through, for about 25-30 minutes.
