Ingredients

  • 2 large eggs
  • 1 3/4 cups buttermilk
  • 8 tablespoons unsalted butter, melted and cooled
  • 2 teaspoons vanilla extract
  • 2 cups pastry flour or 1 3/4 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup pecan meal or almond flour, optional, for flavor

Directions

Step 1 –In a medium-sized mixing bowl, beat the eggs, buttermilk, melted butter, and vanilla.

Step 2 –In a separate bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and pecan meal.

Step 3 –Combine the wet and dry ingredient mixtures, stirring until nearly smooth, with a few small lumps remaining.

Step 4 –Cover the bowl containing the batter with plastic wrap.

Step 5 –Refrigerate the batter for 10 minutes; this step helps the gluten in the batter relax and helps the waffles become extra fluffy.

Step 6 –Spray a waffle iron with non-stick cooking spray before preheating it.

Step 7 –Preheat the waffle iron.

Step 8 –Cook the waffles according to the waffle iron directions, about 2-3 minutes per waffle.

Step 9 –Serve warm.
