Fried Cabbage & Noodles

Ingredients

  • 2 cups fine egg noodles, uncooked
  • 3/4 pound bacon strips, diced
  • 1/2 medium head cabbage, thinly sliced
  • 1/4 teaspoon salt
  • pepper, to taste

Directions

Step 1 –In a large pot of salted boiling water, cook the egg noodles to al dente according to the package directions. Drain.

Step 2 –In a large skillet over medium heat, cook the bacon strips until they are crisp.

Step 3 –Transfer the bacon with a slotted spoon to a paper-towel-lined plate.

Step 4 –Drain the bacon grease from the skillet and reserve 3 tablespoons in the skillet.

Step 5 –Add the cabbage to the reserved bacon grease, cover the skillet, and cook the cabbage on low heat, stirring frequently, until it is tender, about 20 minutes.

Step 6 –Add the cooked noodles to the cabbage and stir to combine.

Step 7 –Add the cooked bacon, the salt, and the pepper to the noodle mixture and cook until it is heated through.
