Ingredients

  • 1 teaspoon kosher salt
  • 1 teaspoon olive oil
  • 1 (16-ounce) box spaghetti
  • 1 pound ground beef
  • 1/2 cup onion, chopped
  • 1 (32-ounce) jar spaghetti sauce
  • 4 tablespoons butter or margarine
  • 4 large eggs, beaten
  • 1 cup parmesan cheese, grated
  • 1 1/2 cups ricotta cheese
  • 1 teaspoon garlic, minced
  • 1 teaspoon Italian seasoning
  • 2 cups mozzarella, shredded
  • dried parsley, optional, to taste, for topping

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Bring a pot of water to a boil.

Step 3 –Season the water with the salt and the olive oil.

Step 4 –Cook the spaghetti in the seasoned water according to the package directions.

Step 5 –In a large skillet over medium-high heat, add the ground beef and the onions.

Step 6 –Cook the beef and the onions, while crumbling the meat, until the beef is browned, about 5-7 minutes.

Step 7 –Turn off the heat. Drain the excess grease from the skillet.

Step 8 –Stir the spaghetti sauce into the beef mixture.

Step 9 –Drain the pasta and return the noodles to the pot.

Step 10 –Stir the butter into the noodles until melted, ensuring the noodles are well-coated.

Step 11 –Add in the eggs and the parmesan while the noodles are still hot, stirring it all together very quickly. This will ensure the eggs are cooked but do not scramble, while making the sauce creamy.

Step 12 –Evenly divide the pasta mixture between two 9-inch pie pans.

Step 13 –In a medium bowl, combine the ricotta, the garlic, and the Italian seasoning, stirring well.

Step 14 –Evenly distribute the ricotta mixture over each pan of the noodle mixture, dropping it over top in small spoonfuls.

Step 15 –Using the back of a spoon or a butter knife, spread the ricotta mixture out evenly over each of the noodle mixtures.

Step 16 –Top each pie with an even amount of the meat sauce.

Step 17 –Top each pie with an even amount of the mozzarella.

Step 18 –If you’re cooking both pies immediately, place the pie pans on a cookie sheet. If you’re only cooking one pie, place the one pie pan on a cookie sheet; cover the other pie tightly with plastic wrap and aluminum foil and then refrigerate or freeze for later use.

Step 19 –Bake until bubbly and the cheese is melted, about 25 minutes.

Step 20 –Garnish with the dried parsley and serve.
