Good Day Biscuits

Good Day Biscuits are just that powerful! The next time you need to switch over to the bright side, these simple mounds of delight will be waiting for you!

Ingredients

  • 1 cup sweet potato, cooked, mashed, and cooled
  • 1/4 cup granulated sugar
  • 1 large egg, beaten
  • 1 tablespoon butter, melted
  • 1 cup milk
  • 3 cups self-rising flour, plus more, to taste, for flouring a worksurface
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • nutmeg, to taste
  • 1/2 cup shortening

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –In a bowl, add the sweet potato, the sugar, the egg, and the melted butter and beat with a fork until smooth.

Step 3 –Stir the milk into the sweet potato mixture.

Step 4 –In another bowl, stir the self-rising flour, the baking powder, the cinnamon, and the nutmeg together.

Step 5 –Cut the shortening into the flour mixture until it resembles coarse crumbs.

Step 6 –Make a well in the center of the flour mixture.

Step 7 –Add the sweet potato mixture to the well and stir until just combined.

Step 8 –Turn the biscuit mixture out onto a well-floured surface and gently knead it, about 10-12 strokes.

Step 9 –Pat the dough to about 1/2-inch thickness, then cut it into biscuits with a floured 2 1/2-inch biscuit cutter.

Step 10 –Place the biscuits 1-inch apart on a large baking sheet.

Step 11 –Bake the biscuits until they are lightly browned, about 15-20 minutes.

Step 12 –Serve.
