Ingredients

  • 1 1/2 pounds small heirloom potatoes
  • 2 ribs celery, chopped
  • 1/4 cup mayonnaise
  • 2 tablespoons fresh chives, finely chopped
  • 1/2 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon sugar
  • 1/4 teaspoon salt
  • 1 1/2 teaspoons fresh tarragon, finely chopped
  • 1/4 teaspoon pepper

Directions

Step 1 –Add the potatoes to a large pot and cover them with heavily salted water.

Step 2 –Bring the potatoes to a boil and then reduce the heat to low.

Step 3 –Simmer the potatoes until tender, about 12-20 minutes.

Step 4 –Stir together the celery, the mayonnaise, the chives, the lemon zest, the lemon juice, the sugar, the salt, the tarragon, and the pepper in a large bowl.

Step 5 –Drain the potatoes and allow them to cool completely.

Step 6 –Halve or quarter the potatoes, depending on their size.

Step 7 –Add the dressing to the potatoes and toss to coat.

Step 8 –Serve.
