Holiday Bites

Ho, ho, ho! Let’s get the party started with some passed apps, shall we? Of course, you could share the classics, but perhaps this year, it’s time to really shake things up! Holiday Bites demonstrate once again the magic of wrapping food around other foods for a wonderful effect; in this case, refreshing and bright red pepper wrapped around creamy mozzarella and crispy bacon. A touch of basil adds herbaceous flavor and fragrance, and a touch of olive oil heightens everything. Holiday Bites add a light refreshment to the party that will make a welcome contrast to the heavier fare to come and will leave you smiling for the rest of the evening.

Ingredients

  • 6 jarred whole roasted red peppers, cut into 32 equally-sized strips
  • 32 fresh basil leaves
  • 11 slices bacon, cooked and cut into thirds
  • 32 fresh ciliegine mozzarella balls, cherry-sized
  • 2 tablespoons extra-virgin olive oil
  • kosher salt, to taste
  • freshly ground black pepper, to taste

Directions

Step 1 –Top the pepper strips with the basil, the bacon, and the mozzarella, dividing them evenly.

Step 2 –Roll the pepper strips around the filing and secure the strips with a wooden pick.

Step 3 –Arrange the bites on a platter and drizzle the olive oil over them.

Step 4 –Season with the salt and the pepper.

Step 5 –Serve.
