If you’ve ever visited your favorite green-bedecked coffeeshop and been tempted by those cute little egg treats sitting in the display, don’t worry! Turns out, you can whip those up in your own kitchen! Copycat Egg Bites create soufflé-like bites of creamy, tender eggs with plenty of cheese! It’s an adorable pack of protein that energizes and satisfies! Copycat Egg Bites may be a recreation of a favorite breakfast, but it tastes better than the real deal!
Ingredients
- 6 large eggs
- 3 teaspoons olive oil
- 3 teaspoons garlic, minced
- 6 tablespoons white cheddar cheese, shredded
- 2 cups water
- chives, optional, to taste, chopped, for garnish
Directions
Step 1 –Coat three (4-ounce) Mason jars with cooking spray.
Step 2 –In a container with a pour spout, add the eggs and whisk until no chunks remain.
Step 3 –Adjust a pressure cooker to the sauté setting.
Step 4 –Add the olive oil to the pressure cooker and heat.
Step 5 –Add the garlic to the hot oil and cook until fragrant, about 2 minutes.
Step 6 –Transfer the garlic to a bowl and clean the pressure cooker out.
Step 7 –In each jar, add 1 teaspoon of the garlic and 2 tablespoons of the cheese.
Step 8 –Evenly pour the eggs into the jars, filling each about halfway.
Step 9 –Stir the egg mixture in the jars with a spoon.
Step 10 –Place a trivet in the bottom of the pressure cooker and add the water.
Step 11 –Place the jars, uncovered, onto the trivet in the pressure cooker.
Step 12 –Seal the pressure cooker and set it to manual-high pressure and set the timer to 10 minutes.
Step 13 –Once the timer goes off, carefully use the quick release to release the pressure.
Step 14 –Take the lid off and carefully remove the jars.
Step 15 –Serve garnished with the chives.
