Howdy Y’all Lasagna

Howdy, partner! After a long day running about, you’re looking for a dish that’s as welcoming as the name suggests. Howdy Y’all Lasagna opens the door and lets you take off your shoes, so you can relax after blazing those trails; every bite is meaty, melty, and spicy with layers of taco beef, cottage cheese, and tortillas. Topped with creamy Monterey Jack, Howdy Y’all Lasagna is a bubbly and bountiful dish that greets you warmly once you sit down at the table.

Ingredients

  • 1 1/2 pounds of ground beef
  • 1 teaspoon seasoned salt
  • 1 (1.25-ounce) package of taco seasoning
  • 1 (14.5-ounce) can of diced tomatoes, undrained
  • 1 (15-ounce) can of tomato sauce
  • 1 (4-ounce) can of green chiles, chopped
  • 2 cups 4% cottage cheese
  • 2 large eggs, lightly beaten
  • 12 (6-inch) corn tortillas, torn
  • 3 1/2 Monterey Jack cheese, plus more to taste, shredded
  • tortilla chips, optional, crushed, for topping
  • salsa, optional, for topping
  • avocado, optional, cubed, for topping

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease a 9×13-inch baking dish.

Step 3 –In a large skillet, cook the beef over medium heat until no longer pink, about 5-7 minutes.

Step 4 –Drain the fat from the skillet.

Step 5 –Add the seasoned salt, taco seasoning, tomatoes, tomato sauce, and chiles.

Step 6 –Reduce the heat to low. Simmer, uncovered, about 15-20 minutes.

Step 7 –In a small bowl, combine the cottage cheese and eggs.

Step 8 –In the prepared baking dish, layer 1/2 of the meat sauce, 1/2 of the tortilla pieces, 1/2 of the cottage cheese mixture, and 1/2 of the Monterey Jack cheese, in that order.

Step 9 –Repeat the layers.

Step 10 –Bake, uncovered, until bubbly, about 30 minutes.

Step 11 –Let stand for 10 minutes.

Step 12 –Serve with your favorite toppings.
