Ingredients

  • 2 cups strawberries, hulled and diced
  • 1 teaspoon lemon juice
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 8 tablespoons butter, unsalted
  • 2 medium bananas
  • 2/3 cup milk
  • 1 tablespoon orange zest
  • 1 teaspoon vanilla extract

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –Line a baking sheet with parchment paper.

Step 3 –Place the strawberries in a large bowl and drizzle with the lemon juice.

Step 4 –In a large bowl, add the flour, the baking powder, the sugar, and the salt, and combine.

Step 5 –Use a fork to cut the butter into the flour mixture until it resembles small peas.

Step 6 –In another bowl, use a fork to mash the bananas.

Step 7 –Add the milk, the orange zest, and the vanilla extract to the bananas and mix to combine.

Step 8 –Add the banana mixture and the strawberry mixture to the flour mixture and mix well using a spatula, ensuring it is not overmixed.

Step 9 –Use a cookie scoop to scoop out the cookie dough and place it on the prepared baking sheet, leaving a couple inches in between each cookie

Step 10 –Bake the cookies, in batches, until they are lightly golden brown, about 7-10 minutes.

Step 11 –Cool, then serve and enjoy!
