Melt-in-Your-Mouth Pumpkin Cookies

Ingredients

For the cookies:

  • 2 cups butter, softened
  • 2 cups granulated sugar
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon nutmeg
  • 2 eggs
  • 2 teaspoons vanilla
  • 1 (15 ounce) can pumpkin
  • 4 cups all-purpose flour

For the frosting:

  • 1/2 cup butter
  • 1/2 cup brown sugar, packed
  • 1/4 cup milk
  • 1 teaspoon vanilla
  • 3-4 cups powdered sugar, plus more as needed to achieve desired consistency
  • ground cinnamon, optional, to taste, for topping

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –In a large bowl, beat the 2 cups of the butter with an electric mixer on medium speed for 30 seconds.

Step 3 –Add the granulated sugar, baking powder, baking soda, salt, 1 teaspoon of the cinnamon, and the nutmeg, beating until combined.

Step 4 –Beat in the eggs and 2 teaspoons of the vanilla until combined.

Step 5 –Beat in the pumpkin.

Step 6 –Beat in as much of the flour as you can with the mixer. Stir in the remaining flour with a wooden spoon.

Step 7 –Drop the dough in heaping teaspoons, 2 inches apart, on an ungreased cookie sheet.

Step 8 –Bake until the tops are set, about 10-12 minutes.

Step 9 –Transfer the cookies from the oven to some wire racks to cool.

Step 10 –Heat the 1/2 cup of the butter and the brown sugar in a small saucepan until melted and smooth.

Step 11 –Transfer the brown sugar mixture to a medium bowl.

Step 12 –Stir in the milk and 1 teaspoon of the vanilla.

Step 13 –Beat in the powdered sugar until smooth.

Step 14 –Once the cookies are cool, spread the frosting on them.

Step 15 –Sprinkle the cookies with the remaining cinnamon.

Step 16 –Serve.
