Italy’s Healing Soup

Ingredients

For the optional homemade chicken broth:

  • 1 chicken carcass, cooked, all skin and meat removed
  • 1 carrot, unpeeled, whole or cut in half
  • 1 stalk celery, cut into 2-3 chunks
  • 1 onion, halved
  • 2 cloves garlic
  • 1 bay leaf
  • 2 rosemary sprigs or herbs of your choice
  • water, to taste

For the soup:

  • 6 cups chicken broth, can substitute store-bought
  • 1 1/2 cups pastina pasta
  • crusty bread, optional, to taste, for serving
  • parmesan croutons, optional, to taste, for serving

Directions

Step 1 –In a large deep pot over medium heat, add the chicken carcass, the carrot, the celery, the onion, the garlic, the bay leaf, and rosemary sprigs.

Step 2 –Add enough of the water to cover the mixture in the soup pot.

Step 3 –Cover the pot with a lid and bring the mixture to a boil.

Step 4 –Reduce the stovetop heat to medium-low and simmer, uncovered, until the flavors meld together and the broth reaches your desired thickness.

Step 5 –Skim off and discard any residue that may have come to the surface of the broth mixture as it simmered.

Step 6 –With a sieve or colander on top of a large bowl, strain the mixture into the bowl.

Step 7 –Reserve the chicken broth and discard the bones, vegetables, and the herbs strained through the sieve.

Step 8 –In the same large deep pot you used to make the broth, add 6 cups of the chicken broth and bring it to a boil.

Step 9 –Add the pastina pasta to the homemade chicken broth and boil until al dente, about 3-4 minutes.

Step 10 –Serve the soup with the crusty bread and the parmesan croutons.
