If you know Casey, you know that pasta is her favorite food. And like with many of our recipes, we like to name them after people that we love! That’s how we came up with Casey’s Creamy Tomato Pasta. When we tasted the bouncy penne in that tangy, cheesy tomato sauce we knew she’d approve. So, we had her try it and here we are! The rest is history. Ingredients
- 8 ounces penne pasta
- 3 tablespoons butter
- 3 cloves garlic
- 1 (15-ounce) can tomato sauce
- 2 tablespoons tomato paste
- 1/2 cup heavy cream
- 1/2 cup parmesan cheese, grated
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 tablespoon fresh parsley, finely chopped, for garnish
Directions
Step 1 –In a large pot of salted boiling water, cook the penne to al dente, according to the package directions.
Step 2 –Drain the penne well.
Step 3 –While the penne is cooking, in a large skillet over medium-high heat, heat the butter until bubbly hot, about 1 minute.
Step 4 –Add the garlic to the butter and sauté until fragrant, about 1 minute.
Step 5 –Add the tomato sauce and the tomato paste to the garlic-butter and bring to a simmer, while stirring, about 4-5 minutes.
Step 6 –Reduce the heat to low and stir the heavy cream and the parmesan into the sauce.
Step 7 –Cook the sauce until it reaches your desired consistency, about 3 minutes.
Step 8 –Season the sauce with the salt and the pepper.
Step 9 –Add the cooked penne to the sauce and toss to evenly coat.
Step 10 –Serve the pasta warm, garnished with the parsley.
